Objectives

During this two-day practical advanced training, participants will deepen their understanding and mastery of the behavior of gelling agents and gelled products thanks to instrumental techniques and in particular to the rheometry. Participants will learn to:

  • Linking industrial problems of the behavior of gelling agents and gelled products to the associated physical and physico-chemical phenomena
  • Evaluate the relevance of an instrumental technique to investigate these questions
  • Identify parameters of interest and appropriate instrumental techniques
  • Take control of certain rheometry techniques for gelling agents and gelled products

  • Any industrial sector concerned by the use of ingredients gelling agent and/or the development of gel products

UNDERSTANDING THE BEHAVIOR OF GELLING AGENTS AND GELIFIED PRODUCTS (Day 1 – 9h-10h30)

Physics of gelation and influencing factors (pH, ionic strength, etc.), macroscopic properties (texture, mechanical strength, viscosity, settling, …)
Sensitivity to implementation effects (mixed, flow, storage, thermal, …)
Identify influencing factors

USUAL INSTRUMENTAL TECHNIQUES (Day 1 – 10am-30pm)

Principles of operation of the usual instrumental techniques for gelling agents and gelled products (viscometer, gelometer, texturometer, rheometer, etc.)
Evaluate the contributions and limits

PRACTICE THE RHEOMETRY OF GELLING AGENTS & GELIFIED PRODUCTS (Day 1 – 13:30 p.m.-17:2 p.m. + Day 9 – 12:30 a.m.-XNUMX:XNUMX p.m.)

Viscosity monitoring as a function of concentration, pH and ionic strength
Monitoring of gelation by viscoelastic properties
Sticky and sliding effect
Reproduce industrial gelled product preparation conditions

USING AND INTERPRETING MEASUREMENT DATA (Day 2 – 13:30 p.m.-17 p.m.)

  • Interpret the industrial behavior of gelling agents and gelled products
  • Search for descriptors of a problem
  • Find threshold and limit values
