Atelier des Méthodes – Gelling & Textures Focus – March 10 & 11, 2020

Texture is at the heart of the challenges ofapplication consumer and industrial products, justifying the use of thickeners, gelling agents and texturizers of all kinds (xanthan, guar, pectin, alginate, etc.). In practice, whether in formulation, industrialization or production, texturing is often a source of misunderstood variability and non-conformity (loss of viscosity, phase shift, settling, etc.).

The two days of March of theAtelier des Méthodes aim to address issues related to texture, through a first day of initiation to instrumental techniques (viscometry, texturometry and rheometry) and a second day of in-depth study of texturing phenomena and rheometric and physical measurement techniques to quantify them.

During this day of discovery and initiation to viscometry, texturometry and rheometry, you will be able to familiarize yourself with the principles of these instrumental techniques of interest for texturizers and textured products, and better understand their scope of use, their respective advantages and limits.

  • Introduction of the notions of viscosity, rheology, texture
  • Challenges of measurement, from comparison to modelling, for R&D, industrialization, production or application objectives
  • Principles of viscometer, texturometer and rheometer: which technique(s) for which use(s)?
  • Practical workshop viscometry, texturometry and usual rheometry. Instrumentation: rotational viscometer (Brookfield type), coaxial cylinder visco-rheometer, texture analyzer
  • Presentation of case studies

March 11 – Scientific methods, instrumental techniques and study approaches for understanding and mastering textures and influencing factors of textured flexible products

This in-depth training day will be dedicated to the phenomena of texturing and gelation, as well as rheometric approaches, physical measurement and scientific methods to quantify and anticipate the behavior of gelling agents and textured products both in process and in application and better understand the factors of influence and their coupling.

Objectives

Make the link between the principles of action of thickeners, gelling agents and texturizers and the associated industrial issues - Understand the advantages of instrumental analysis to quantify and understand the impact of additives - Practice viscoelastic rheometric techniques and discover cases of study.

  • Introduction to the principles of action of thickeners, gelling agents, texturizers (physico-chemistry, typology, influencing factors, etc.)
  • Common industrial issues (variability, stabilization, settling, etc.) and issues of product/process coupling in formulation, industrialization, production and application
  • Understand the impact of additives and processing conditions thanks to rheometric measurement
  • Reminder of the operating principles of the rheometer and modes of use
  • Case study in formulation, industrialization and problem solving
  • Practical workshop of viscoelastic protocols
