Case study – Study of texture variability of gelled waters according to formulation and process

Agribusiness

Client type: SME

Service contact: R&D

The Customer wishes to optimize the texture of gelled waters based on hydrocolloids intended for people suffering from swallowing disorders and calls on RHEONIS to set up appropriate instrumental protocols and study the influence of various factors related to the formulation and to the process.

Make the link between texture and influencing factors

In response to this request, RHEONIS implemented its know-how in rheometric techniques to qualify the variability of customer products and its scientific expertise for the analysis of correlations with sampling parameters.

The stages of the study were therefore as follows:

  1. Adaptation of viscoelastic rheometric protocols to the discrimination of Customer products
  2. Systematic study of products
  3. Analysis of correlations between measured parameters and sampling parameters
  4. Conclusions on the hierarchy of influencing factors and operational recommendations

Viscoelastic measurement to quantify texture parameters

The study made it possible to identify and rank the factors influencing the texture variability observed and to recommend guidelines for the formulation and processing to the Client.
